With the new special DT sharpening stone, sharpening a convex edge – regarded by many experts as the sharpest and most durable edge available – is no longer a problem. It works with all types of knives. The sharpener has a fixed, integrated angle that clearly shows how the knife should be held against the sharpening surface; then simply move the knife back and forth. Once you achieve a sharp, convex blade profile, turn the sharpening stone over and polish the outermost edge with the ceramic side of the sharpener.
