Sharpens both plain and serrated knives!

Includes a pair of medium (400 grit) and a pair of fine (600 grit) diamond sharpening rods for sharpening and honing. Three preset angles (17°, 20° and 25°) allow you to sharpen any knife like a pro. Also included is a diamond triangular rod with 3 radii that will sharpen all types of serrations, as well as awls and fish hooks. Rubberized non-slip base with integrated hand guard and easy rod storage.

The Master's Edge® All Diamond knife sharpening system is suitable for utility and hunting knives as well as kitchen knives. It looks great on the countertop, but also stores easily in a drawer.

There are three preset rod angles designed to provide a precise edge:

17º Fine Angle: for fillet work and fine slicing
20º Fine Angle: for carving knives, chopping knives, paring and skinning knives.
25º Medium Angle: for hunting, camping, utility and chef's knives.

Instructions
USING YOUR MASTER'S EDGE® KNIFE SHARPENER

The round medium diamond rods are for sharpening, and the round fine diamond rods are for honing. The multi-angle triangular rod is used to sharpen all types of serrations.

Setup - Begin by placing the Master's Edge® All Diamond knife sharpener on a stable, flat surface at a comfortable working height.

1st Stage Sharpening:

Step 1 - To begin sharpening, unfold the hand guard to expose the marked guide holes. Then choose the rod type and the angle at which you want to sharpen (17°, 20° or 25°) by placing the sharpening rods into the corresponding guide holes.

Step 2 - Hold the base firmly with your non-dominant hand. Make sure to keep your hand and thumb below the hand guard.

Step 3 - With the knife in your dominant hand, place the heel of the blade (closest to the handle) one inch or more below the top of one of the rods.

Step 4 - Draw the blade down the rod and toward you, moving toward the tip of the knife. The motion is similar to slicing bread.

Step 5 - Repeat this action on the other rod for the opposite side of the edge.

Step 6 - Continue alternating strokes on both rods until you achieve the desired sharpness. 10 to 20 strokes per side should be sufficient

2nd Stage Sharpening:

Step 1 - Follow the setup and safety instructions above. Start by placing the rods in the 20º angle holes and follow the sharpening instructions as outlined in the 1st stage sharpening above, but do not hone/finish the edge, use only 10-12 strokes on each rod. This is for thinning the blade edge.

Step 2 – Once you have thinned the blade edge, move the rods to the 25° angle holes for the 2nd stage sharpening to finish the edge. Simply follow the same technique used previously. This will result in a durable and sharp compound bevel.

Sharpening Serrations
The multi-angle triangular rod included with the Master's Edge® All Diamond knife sharpener is used for sharpening all types of serrations. There are two guide holes that accept the triangular rod. This allows sharpening serrations on the left or right side. Begin by determining the orientation of your serrations (left or right), which radius of the triangular rod best fits your serrations, and the proper angle at which to sharpen them (most serrations are very shallow; 17° is a good place to start). Then place the triangular rod in the correct triangular guide hole. Sharpen each serration individually by running each serration straight down the correct radius of the triangular rod, as if slicing a thin layer from the rod's surface. Finish the edge by running the rod flat along the back edge of the serrated sections to polish off the burr that has formed on the opposite side.

Professional Tips** - For best results, use light pressure while sharpening and avoid rolling the tip of your knife off the rod. This can damage the tip and make it duller than the rest of the blade. Patience and a steady, slow hand are recommended.

Note: Do not apply oil to the Lansky® Diamond surface; instead, clean the diamond hones with water and wipe away filings with a lint-free cloth. The diamond hones should be completely dry before the next use.


CAUTION: Sharpening knives is inherently dangerous. When used properly, this sharpening system cannot harm you, but a carelessly handled blade or sharp object can.
