The knives from the HONSHO-KANEMASA E-series feature blades made from Japanese SK-95 high carbon steel, which provides excellent edge retention and a hardness of 60-61 HRC. The handles, with their basic and clean shape, provide an excellent grip and are highly wear-resistant. Full-tang construction with a welded guard (bolster) for professional use. Proudly made in Seki City, Japan.
